The second section describes the heating and refrigeration equipment, the principles of the design and operation of fire, gas, steam and electric equipment. Thus, the book beautifully shows how Soviet cuisine was arranged and equipped at catering establishments - restaurants, cafes, public canteens at that time.

Во втором разделе рассказывается о тепловом и холодильном оборудовании, о принципах устройства и эксплуатации огневой, газовой, пароварочной и электрической аппаратуры. Таким образом книга прекрасно показывает как была устроена и оборудована советская кухня при предприятиях общественного питания - рестораны, кафе, общественные столовые в то время.
